I'm not sure of your total budget for cameras and lenses and if you have any lenses already.
You'll likely want to avoid a full frame Canon DSLR camera to keep the size of your camera somewhat smaller and lighter. The EOS M series of cameras have a very limited lens selection and I wouldn't recommend a camera without a built-in viewfinder.
Depending on your budget I might suggest the 90D or the R7.
Best Canon Lens For Safari
